This spicy potato salad is quick to prepare and makes a satisfying accompaniment to plainly cooked meat or fish.

Ingredients
900 gram potato

2 red bell pepper

2 celery sticks finely chopped
1 shallot, finely chopped
2 or 3 spring onions finely chopped
1 green chilli, seeded and finely chopped
1 garlic clove crushed
10ml finely snipped fresh chives
10ml finely chopped fresh basil
1tbsp finely chopped fresh parsley
1tbsp single cream
2tbsp salad cream
1tbsp mayonnaise
1tsp prepared mil mustard
1.5 tsp sugar
salt as taste
snipped fresh chives to garnish
Directions
Peel potatoes. Boil in salted water for 10-12 minutes, until tender. Drain and cool, then cut into cubes and place in a large mixing bowl.
Add chopped red peppers, celery, shallot, spring onions and green chili to the potatoes together with the crushed garlic and chopped herbs and stir gently to combine.
To make the dressing, blend the cream, salad cream, mayonnaise, mustard and sugar in a small bowl, stringing until the mixture is well combined.
Pour the dressing over the salad and toss gently to coat evenly. Serve garnished with snipped chives.
Recipe Note
Variation:
If you prefer, leave out the salad cream and increase the amount of mayonnaise by 2tbsp. To turn the salad into a light lunch dish, add some diced chicken and a handful of green beans that have been refreshed under cold running water.
