This classic fruit and vegetable combination makes a wonderful, fresh-tasting salad. A great side dish for the winter months, it is particularly good with hot or cold poultry dishes.

Ingredients
450grams carrots
2 large oranges
15ml olive oil
30ml/2tbsp lemon juice
pinch of sugar

30ml/2tbsp chopped pistachio nuts
Salt and ground black pepper
Directions
Peel the carrot and grate them into a large serving bowl.
Cut a slice off the top and bottom of one orange. Place the orange upright on a board and cut off the skin, taking care to remove all the bitter white pith. Repeat with the second orange, reserving any juice. Working over a bowl to catch the juices, cut between the membranes to release the segments.
Whisk together the olive oil, lemon juice and reserved orange juice in a bowl. Season with a little salt and pepper to taste and add sugar; if you like.
Toss the orange segments together with the carrots and pour the dressing over: scatter the salad with the pistachio nuts before serving.
